Gingered Crab Salad

Man, there are a lot of good-looking salad recipes out there. I wanted to do something with salmon, tuna or maybe prawns, but when I saw one with crab, I just couldn’t resist. I can rarely eat crab in restaurants anymore, so it’s nice to find something like this that I can whip up at home.

[Prep: 10min / Cook: –]

Ingredients

– 1 can (6-8oz) lump crabmeat
– 2 mandarin oranges
– 1 or 2 apples
– 100g / 3.5oz of goat cheese
– 150g of walnuts (pieces or chopped)
– 4 cups mixed salad greens

Dressing
– tsp of ginger powder
– 2 tsp of lemon juice
– 2 tsp of apple cider vinegar
– 1 Tbs olive oil
– dash of ground black pepper

Steps
  1. Peel and section the orange and slice the apple into cubes. Rinse the greens.
  2. Mix greens, fruit, nuts and crab in a large bowl and crumble cheese on top.
  3. In a small bowl, combine all dressing ingredients. Add to salad and toss to coat.
  4. Ready to eat!

[Serves 2]

Notes
  • If you can’t find real crab meat, you can substitute artificial. It’ll probably be fine, but the flavor and texture won’t be quite as nice. But for what it’s worth: real crab meat canned is pretty decent and surprisingly inexpensive.
  • It’s probably better to use real ginger for the dressing, but the powder gets the job done pretty well.
  • And for the greens- try to use a really bitter lettuce like red leaf and arugula. The bitterness is a nice compliment to the strong, tangy ginger and sweet crab flavors.
