Kind-of-Greek Tortellini Salad

Hmm, yeah. No special notes on this one. I had no recipe and just bought a bunch of stuff at the grocery store with some sort of random vision and this is what happened. I was pleased. Hope you will be too. You can eat this right away (with the pasta still a little warm) or after chilling for awhile- both are good. Oh, and add olives…I just don’t like them myself.

[Prep: 10min / Cook: 20min]

Ingredients

– about 8oz/200g cheese-filled spinach tortellini
– about 200g cooked, cubed ham
– 100-200g feta cheese (also cubed)
– 1 bell pepper
– 1 small red onion
– 1 medium cucumber
– a smattering of pine nuts
– prepared Caesar dressing

Steps
  1. Boil tortellini according to package directions.
  2. Meanwhile, chop the veggies.
  3. Drain and rinse the pasta with cool water.
  4. Toss pasta, veggies, ham, cheese & pine nuts with a drizzle of Caesar dressing in a large bowl.
  5. Ready to eat!
